We’re thrilled to announce that Giles will be cooking live in The Hampshire Fare Cookery Theatre at the stunning Stansted House Estate.
Join him live on stage at 3.45 pm on Saturday 7th as part of the Southdowns Food Festival.

Now in its second year, the festival is quickly establishing itself as a true celebration of the finest local and seasonal produce the South Downs has to offer.
Giles will be preparing a dish with two of his favourite ingredients, this vibrant dish showcases these two ingredients and it’s easy to recreate at home:
- Chalk Stream trout – Sustainably raised in the crystal-clear, fast-flowing waters of Hampshire, this premium fish from ChalkStream Foods is prized for its delicate texture and clean, pure flavour.
- British asparagus – Thanks to Barfoots, this hero of the UK’s seasonal calendar is at its absolute peak. British asparagus is unmatched when in season – crisp, sweet, and bursting with flavour.
To complete the dish, he’ll be using beautiful, flavour-packed garnishes from Lusso Leaf – expertly grown leaves that bring colour, freshness, and finesse to the plate.
